Pickling is a term used for a wide variety of foods that have been prepared, and usually preserved, by the addition of acid. There are two primary types of pickles. Fermented pickles are preserved by encouraging the growth of acid-producing bacteria, including lactic acid bacteria, which create the preservative acid. Non-fermented or infused pickles have acid added directly.
While in the United States the term "pickle" is often used to refer to a pickled cucumber, many other foods can be and are pickled.
