Distilled spirits are simply fermented alcoholic beverages from which water or other nonalcoholic substances have been removed in order to yield a more concentrated drink. This is usually done by fractional distillation in a still, taking advantage of the varying boiling points of alcohol and water. However, a similar effect can also be achieved by freeze distillation, taking advantage of differences in freezing point.

Home distillation of alcoholic beverages is more dangerous than fermentation, since substances such as methyl alcohol, which are naturally and safely present in all fermented beverages, may be concentrated to dangerous levels by improper distillation. Unlicensed distillation of alcohol is also illegal in many parts of the world, including all of the United States.
