Grow. Preserve. Transform.

"Grow. Preserve. Transform." is the mission statement of The Cellar and the Pantry. It represents three interrelated categories of food craft and home production.
- Grow represents not just gardening but all methods of obtaining the raw ingredients of our diet from scratch, including the raising of livestock for meat, dairy and eggs; and foraging food from wild sources (including hunting and fishing for edible species).
- Preserve represents all of the arts that allow us to put food by without spoilage to be eaten later, including pressure and water bath canning, pickling, freezing, drying, and root cellaring.
- Transform represents the use of biological processes, such as fermentation, to change simple raw ingredients into alcoholic drinks such as beer, wine, and spirits and flavorful foods such as cheese and pickles.
Many of these categories overlap; for example, some pickles are fermented and some are merely preserved in brine; in addition, most fermentations can be thought of as methods of preserving food; wine stays fresh longer than grapes do and cheese can be stored and aged long after milk would have become inedible.
